Cauliflower Rice Sushi

Do you love sushi but don’t eat grains? You can still enjoy sushi with this cauliflower rice sushi its completely grain free!

Ingredients:

1            cauliflower head

1            cucumber

1            avocado

1            salmon fillet

1 pkg     nori (dried seaweed sheets)

3 Tbsp   siracha mayo

Instructions:

  1. Cut up all the veggies and salmon into strips
  2. Grate cauliflower rice on a cheese grater
  3. Place rice on nori fulling up half of the nori sheet
  4. Place veggies and salmon on top of rice
  5. Roll sushi (bamboo roller mat makes it easier)
  6. Cut sushi to desired size
