Spring Salad Recipe

Ingredients:

  • 4 cups Kale
  • 4 cups Arugula
  • 5 cup Almonds
  • 1 cup Cucumber
  • 1 cup Purple cabbage
  • 2 cups Red bell pepper
  • 1 cup Mushrooms
  • 1 cup Strawberries (or blueberries)
  • (add any extra veggies to your salad that you enjoy)

Balsamic vinaigrette dressing (this make a little less than a cup of dressing if you enjoy it you can triple ingredients for a full bottle)

  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 1 tsp mustard
  • 1 clove garlic
  • Salt and pepper to taste

Directions:

  1. chop up kale, arugula, and all the vegetables
  2. add everything to a large bowl
  3. mix all vinaigrette ingredients together
  4. don’t add dressing until served
