Coconut Curry Quinoa

1 cup quinoa
13.5 oz can coconut milk

¼ cup water
1 tbsp curry powder
1 tsp turmeric
Salt to taste
1 tbsp coconut oil
1 chicken sausage
1 zucchini
1/2 onion
1 cup cabbage
1 cup mushrooms
1 inch ginger
2 garlic cloves
3 tbsp liquid aminos
1 tsp curry powder
1 tsp paprika
Salt to taste


  1. Put quinoa, coconut milk, and water into a pot then add curry powder and turmeric. Bring to a boil then reduce to a simmer and cover pot with a lid. Let cook for about 15-20 min.
  2. While the quinoa is cooking heat up the coconut oil on a pan over medium heat. When hot add garlic and cook till aromatic, then add onions and ginger and cook for 2-4 min. add the rest of the veggies, spices, liquid aminos and chicken sausage, and cook for about 5-10 min.
  3. Serve veggies on top of quinoa
