Ingredients
1 tablespoon olive oil
1 green bell pepper, chopped
2 onions, chopped
4 cloves garlic, minced
2 cups spinach
1 zucchini, chopped
1 yellow squash, chopped
4 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
1 tablespoon dried parsley
½ teaspoon salt
½ teaspoon ground black pepper
1 (14.5oz) can diced tomatoes with juice
1 (15oz) can chili black beans, rinsed and drained
1 (15oz) can garbanzo beans, drained
1 (15oz) can kidney beans, rinsed and drained
2 (6oz) cans tomato paste
1 (8oz) can tomato sauce
1 cup vegetable broth
Directions
Prep: 45 min, cook: 5 hr 10 min, ready in 5 hr 55 min
- Heat olive oil in a pan then add onions, garlic, and bell pepper. Cook until onions are golden brown about 10 min.
- Place mixture into a slow cooker
- Add in spinach, succhini, yellow squash, chili powder, cumin, oregano, parsley, salt, black pepper, tomatoes, all the beans, and tomato paste
- Mix thoroughly then pour the tomato sauce and vegetable broth over the ingredients
- Set the cooker on low, and cook for 4 to 5 hours
- Add more tomato sauce and vegetable broth to desired thickness. Add more seasoning if needed
- Cook an additional 1 to 2 hours to blend the flavors
- Add cheese and melt then its ready to eat
